Also consider these constructions, where "all but" can be replaced by "except" :
"All but the oldest fruit was still edible."
"All fruit but the oldest was still edible."
"Close all windows but this one."

And also the "anything but" which means "not at all", "as far from X as possible"
"anything but ordinary".
